Orzo With Peas

Ingredients

  • 1 1/2 cups uncooked orzo pasta
  • 1 cup frozen peas, thawed
  • 3 tablespoons unsalted butter
  • 1 teaspoon fresh oregano, chopped
  • 1/2 cup crumbled feta cheese
  • 2 teaspoons fresh lemon juice
  • 1/2 teaspoon grated lemon zest
  • 1/8 teaspoon salt
  • 1/8 teaspoon black petter


Method

  • Bring 3-quart pot water to boil
  • Lightly salt water, add orzo
  • Cook for 9 minutes, stirring occasionally
  • Stir in peas, and return to boil
  • Boil 1 minute, then drain
  • Toss orzo and peas with butter and oregano, stirring until butter melted.
  • Stir in cheese, lemon juice, zest, salt and pepper
  • Serve warm
