Peach Cobbler

Ingredients

  • (2) 15-oz cans sliced peaches in syrup
  • 1/2 cup butter
  • 1 cup self-rising flour
  • 1 cup sugar (or Splenda)
  • 1 cup milk
  • 1 teaspoon cinnamon


Equipment

  • 9" x 12" glass baking dish
  • Medium mixing bowl


Heat oven to 350F.

Drain one can of peaches, reserving the syrup from the second can.

Place the butter in baking dish, heat in the oven until melted.

In a medium bowl, combine the flour and sugar. Stir in the milk and reserved syrup.

Remove baking dish from oven, and slowly pour mixture over the melted butter.

Arrange the peaches over the batter.

Sprinkle the cinnamon over the peaches.

Bake for 1 hour. The cobbler is done when the batter rises around the peaches, and the crust is thick and golden brown.

Serve warm with vanilla ice-cream.


Note: If self-rising flour is not available, the following substitute may be used: 1 cup all-purpose flour, 1 1/2 teaspoons baking powder, and 1/8 teaspoon salt, thoroughly combined.
