Peach Ice Cream

Ingredients
- 2 cups milk
- 1-3/4 cups sugar, divided
- 3 eggs, beaten
- 1/2 teaspoon salt
- 2 teaspoons vanilla
- 4 to 6 very ripe peaches, peeled and pitted
- 4 cups heavy cream
Preparation
- In a 3-quart casserole dish, add milk, 1 cup sugar, eggs and salt.
- Cover and cook at high power in microwave for 4-6 minutes or until milk is scalded; stir once during cooking.
- Cool to room temperature.
- Puree peaches.
- Stir in 3/4 cup sugar into 2-1/2 cup of puree.
- Add peach puree and heavy cream to milk mixture.
- Freeze according to ice cream maker directions.
- Makes 2 quarts.
