Peach Ice Cream

Ingredients

  • 2 cups milk
  • 1-3/4 cups sugar, divided
  • 3 eggs, beaten
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla
  • 4 to 6 very ripe peaches, peeled and pitted
  • 4 cups heavy cream


Preparation

  1. In a 3-quart casserole dish, add milk, 1 cup sugar, eggs and salt.
  2. Cover and cook at high power in microwave for 4-6 minutes or until milk is scalded; stir once during cooking.
  3. Cool to room temperature.
  4. Puree peaches.
  5. Stir in 3/4 cup sugar into 2-1/2 cup of puree.
  6. Add peach puree and heavy cream to milk mixture.
  7. Freeze according to ice cream maker directions.
  8. Makes 2 quarts.
