Pumpkin Cake

Ingredients

  • 2 cups all purpose flour
  • 2 cups sugar
  • 3 teaspoons Pumpkin Pie spice
  • 1 29oz can of pumpkin -or- 2 cups of pureed fresh pumpkin
  • 1 cup of apple sauce
  • 4 eggs


Equipment

  • Bundt pan


Preparation

  1. Preheat oven to 350F
  2. Combine flour, sugar, and spices
  3. Add applesauce, pumpkin, and eggs
  4. Spray pan with Pam and flour
  5. Bake for 1 hour, or until internal temperature reaches 180F
  6. Ice using following recipe


Icing

  • 1/2 box powdered sugar (or half a bag)
  • 4 tablespoons butter (1/2 stick, room temperature)
  • 1 teaspoon vanilla extract
  • 8oz cream cheese (room temperature)


Preparation

  1. Combine sugar, butter, vanilla and cream cheese in food processor until smooth
