Pumpkin Cake

Ingredients
- 2 cups all purpose flour
- 2 cups sugar
- 3 teaspoons Pumpkin Pie spice
- 1 29oz can of pumpkin -or- 2 cups of pureed fresh pumpkin
- 1 cup of apple sauce
- 4 eggs
Equipment
- Bundt pan
Preparation
- Preheat oven to 350F
- Combine flour, sugar, and spices
- Add applesauce, pumpkin, and eggs
- Spray pan with Pam and flour
- Bake for 1 hour, or until internal temperature reaches 180F
- Ice using following recipe
Icing
- 1/2 box powdered sugar (or half a bag)
- 4 tablespoons butter (1/2 stick, room temperature)
- 1 teaspoon vanilla extract
- 8oz cream cheese (room temperature)
Preparation
- Combine sugar, butter, vanilla and cream cheese in food processor until smooth
