Sabayon (Zabaglione)

Ingredients

  • 6 egg yolks
  • 1/2 cup sugar
  • 1/2 cup Marsala (sweet amber)
  • 1 pinch of kosher salt


Equipment

  • 4 quart sauce pan
  • Large glass mixing bowl that fits pan
  • Thermometer
  • Electric hand mixer


Preparation

  1. Bring 1" water in a 4 qt sauce pan to a boil
  2. In a large glass mixing bowl, add sugar and eggs
  3. Using an electric mixer, cream to ribbon stage
  4. Add kosher salt
  5. Slowly add Marsala until fully emulsified (salad dressing consistency)
  6. Turn boiling water down to a simmer
  7. Place bowl on top of pan, in a double boiler arrangement
  8. Continue mixing until temperature is 145F to 150F (about 15 minutes)
  9. Remove from heat
  10. Serve over mixed berries
