Vegan Oatmeal Raisin Blueberry Cookies

Ingredients
- 1/3 cup soy milk
- 2 Tbsp ground flax seeds
- 2/3 cup brown sugar
- 1/3 cup oil
- 1 tsp vanilla extract
- 3/4 cup flour
- 1/2 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1/4 tsb baking soda
- 1/4 tsp salt
- 1 1/2 cups quick-cooking oats
- 1/2 cup raisins
- 1/2 cup blueberries
Preparation
- Preheat oven to 350F
- Mix the soy milk, flax seeds, brown sugar and oil until it looks like caramel.
- Add the vanilla extract, flour, cinnamon, nutmeg, baking soda and salt.
- Fold in oats, raisins and blueberries.
- Using #20 disher, drop dough spaced 2" apart on cookie sheet lined with parchment paper; flatten slightly after placing.
- Bake for 10 minutes for chewey cookies, 12 minutes for crunchy.
Notes
- Cooked for 14 minutes on Silpat, still seem under-cooked.
